Preparation
  1. Heat olive oil in a large pot over medium-high heat. Add beef chunks in batches, searing until golden. Remove and set aside.
  2. In the same pot, add diced onion and minced garlic. Sauté until fragrant and golden.
  3. Add diced tomatoes, beef broth, and soy sauce to the pot. Stir to combine.
  4. Return the seared beef to the pot, ensuring it is submerged in the sauce.
  5. Add sliced carrots, diced potatoes, and trimmed green beans. Stir gently.
  6. Bring to a gentle boil, then reduce heat to low, cover, and simmer for 1.5 to 2 hours.
  7. Once the beef is tender, season with salt and pepper to taste. Serve hot, garnished with fresh herbs.

Notes

For a quicker meal, you can use a slow cooker. Combine all ingredients and cook on low throughout the day. Adjust thickness by adding more beef broth if necessary.
