Ingredients
  

For the Pancakes
  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups buttermilk
  • 2 large eggs
  • 1/4 cup melted butter
For the Smash Burger Filling
  • 1 pound ground beef (80/20 for the best flavor)
  • Salt and pepper to taste
  • Cheese slices (American or cheddar) the classics!
  • Optional toppings lettuce, tomato, pickles, and your favorite condiments

Method
 

Make the Pancake Batter
  1. In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk together the buttermilk, eggs, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined. Remember, a few lumps are totally fine!
Cook the Smash Burgers
  1. Heat a skillet or griddle on medium-high heat. While that's warming up, form your ground beef into 4 equal balls.
  2. Place a ball of beef on the hot skillet and smash it down with a spatula. Season with salt and pepper.
  3. Cook each patty for about 2-3 minutes, then flip and add a slice of cheese. Cook until the cheese is melty and the burger is cooked to your liking.
Cook the Pancakes
  1. In the same skillet, pour about 1/4 cup of pancake batter for each pancake.
  2. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
  3. Repeat until all your batter is used up.
Assemble Your Delight
  1. Layer a pancake, then a smash burger, and finish with another pancake on top.
  2. Add your desired toppings—lettuce, tomato, or pickles work great! Drizzle with your favorite condiment.

Notes

Don’t rush the smash; let your burger get a good sear for flavor. Consider adding herbs or cheese to the batter for an extra zing. The pancake batter can be made ahead and stored in the fridge.
