Ingredients
  

For the Pancakes
  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/2 teaspoon vanilla extract
For the Smash Burgers
  • 1 pound ground beef (80/20)
  • Salt and pepper, to taste
  • Cheddar cheese slices
  • Lettuce, tomato, and onion (your choice of toppings)
  • Ketchup and mustard for serving

Method
 

Preparation
  1. Preheat your skillet or griddle to medium-high heat and lightly grease it with non-stick spray or butter.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  3. In another bowl, mix the milk, egg, melted butter, and vanilla extract. Pour the wet mix into the dry ingredients and stir until just combined—do not overmix.
Cooking
  1. Pour 1/4 cup of batter onto the hot skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
  2. While the pancakes cool slightly, form the ground beef into small balls and season with salt and pepper. Cook on a skillet, smashing down to form patties, for 3-4 minutes on one side, add cheese, then flip.
Assembly
  1. On each pancake, stack a smash burger patty, add lettuce, tomato, onion, and your favorite condiments. Top with another pancake.
Serving
  1. Serve hot and enjoy this unique combination of breakfast and lunch.
