Ingredients
  

For the fritters
  • 1 cup smoked Gouda cheese, shredded More is always better!
  • ½ cup all-purpose flour
  • ½ cup breadcrumbs Try using panko for extra crunch!
  • 2 large eggs
  • 1 tsp baking powder
  • ½ tsp garlic powder
  • to taste salt
  • to taste pepper
  • as needed olive oil for frying
For the Balsamic Honey Mustard Dipping Sauce
  • 2 tbsp balsamic vinegar
  • 2 tbsp honey
  • 2 tbsp Dijon mustard
  • to taste salt
  • to taste pepper

Method
 

Preparation
  1. In a mixing bowl, combine the flour, breadcrumbs, baking powder, garlic powder, salt, and pepper. Give it a good stir until everything is well mixed.
  2. Add in the shredded smoked Gouda and mix again until combined.
  3. Beat the eggs in a separate bowl, then add to the cheese mixture. Stir until well combined to form a thick batter.
Cooking
  1. In a large skillet, heat olive oil over medium-high heat.
  2. Scoop out balls of the mixture, forming them into fritters (about 2 inches wide) and gently place them in the hot oil.
  3. Fry until golden brown, turning occasionally for even cooking, about 3-4 minutes per side. Avoid overcrowding the pan.
  4. While the fritters are frying, prepare the dipping sauce by combining balsamic vinegar, honey, Dijon mustard, salt, and pepper in a bowl. Mix until smooth.
  5. Once the fritters are golden and crispy, drain excess oil on a paper towel, serve hot with the dipping sauce on the side.

Notes

You can prepare the fritter mixture ahead of time and store in the fridge. For a healthier version, bake the fritters in a preheated oven at 400°F (200°C) for 15-20 minutes, flipping halfway through. If frying in batches, keep the finished fritters warm in a low oven.
