  • 1/4 cup grated carrot
  • 1/4 cup diced bell pepper Red or yellow bell pepper for sweetness.
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced Freshly minced for better flavor.
  • 1 tablespoon smoked paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
For the Creamy Tahini Sauce
  • 1/4 cup tahini
  • 2 tablespoons lemon juice (fresh is best) Fresh lemon juice enhances the flavor.
  • 1 clove garlic, minced Freshly minced for better flavor.
  • Water as needed to thin the sauce Add gradually for desired consistency.
  • Salt to taste

Method
 

Mixing It Up
