  • 1 tablespoon olive oil
  • 1 can cream of mushroom soup Use low-fat version for lower calories
  • 1 cup chicken broth

  • 2 cups water
  • 1 tablespoon butter
For the Green Beans
  • 1 pound fresh green beans or frozen if easier

  • to taste Salt and pepper

Method

Preparation
  1. Pat your pork chops dry with paper towels and season them generously with salt and pepper.
Searing the Pork Chops
  1. In a large skillet, heat the olive oil over medium-high heat. Once shimmering, add the pork chops and cook for about 4-5 minutes on each side until golden brown. Remove from skillet and set aside.
Making the Sauce
  1. In the same skillet, stir in the cream of mushroom soup and chicken broth, scraping up any bits stuck to the bottom. Let simmer for about 3 minutes.
Cooking the Pork Chops
  1. Return the pork chops to the skillet, spoon some sauce over the top, cover, reduce heat to low, and cook for about 20-25 minutes.
Preparing the Rice A Roni
  1. Prepare Rice A Roni according to package instructions by bringing 2 cups of water to a boil, adding Rice A Roni and the flavor packet, then add butter. Stir, reduce heat to low, and cover until rice is tender.
Cooking the Green Beans
  1. In another pot, bring water to a boil, add green beans, and cook for about 4-5 minutes until vibrant and tender-crisp. Toss with garlic powder, salt, and pepper.
Serving
  1. Serve the pork chops over a bed of Rice A Roni, drizzle with the creamy sauce, and add a side of green beans. Enjoy!

Notes

For alternative proteins, you can use chicken thighs or turkey cutlets. To enhance flavor, consider adding diced onions or mushrooms to the sauce.
