  • 3 pieces ripe bananas, mashed The riper the bananas, the better!
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup sugar Can be substituted with coconut sugar or monk fruit sweetener.
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 1/2 cups all-purpose flour
Snickerdoodle Topping
  • 1 tablespoon sugar
  • 1 teaspoon cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the melted butter and mashed bananas.
  3. Mix in the baking soda, salt, and sugar. Then whisk in the egg, vanilla extract, and cinnamon.
  4. Gently stir in the all-purpose flour until just combined.
  5. Grease a loaf pan with butter or non-stick spray.
  6. In a small bowl, mix together the sugar and cinnamon for the topping.
Baking
  1. Pour the batter into the prepared loaf pan and sprinkle the snickerdoodle topping on top.
  2. Bake for about 60 minutes, or until a toothpick comes out clean.
  3. Let the loaf cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

This Snickerdoodle Banana Bread can be stored for up to 3 days at room temperature or frozen for up to 3 months. Don't skip the topping as it elevates the bread to snickerdoodle stardom. You can also add chocolate chips or nuts to the batter for extra flavor.
