Preparation
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine the cubed sweet potatoes, olive oil, cinnamon, smoked paprika, cayenne pepper, salt, and pepper. Mix until all pieces are coated.
Roasting
- Spread the seasoned sweet potatoes out evenly on a baking sheet lined with parchment paper.
- Roast in the oven for about 25-30 minutes, flipping once halfway through, until golden and tender.
Finishing Touches
- Once the potatoes are roasted, sprinkle crumbled feta over them and drizzle with honey. Return to the oven for another 5 minutes.
Serving
- Remove from the oven, garnish with chopped parsley if desired, and serve.
Notes
Don't hesitate to experiment with spices or add minced garlic for an interesting twist. Leftovers keep well in the fridge for up to 5 days.
