Ingredients
  

Seafood
  • 2 fillets salmon fillets Wild-caught is best, if available.
  • 1 pound shrimp, peeled and deveined
Vegetables
  • 1 cup cherry tomatoes, halved
  • 1 medium onion, diced
  • 1 bell pepper bell pepper, chopped Any color works.
  • 2 cloves garlic, minced
Seasoning
  • 2 tablespoons Cajun seasoning It's love in a spice jar!
  • 1 tablespoon olive oil For cooking.
  • 1 lime lime, juiced
  • to taste Salt and pepper
Garnish
  • to taste Fresh parsley, chopped For garnishing.

Method
 

Preparation
  1. Chop the onions, bell pepper, and garlic.
Cooking Salmon
  1. Heat olive oil in a large skillet over medium heat.
  2. Season the salmon fillets with salt, pepper, and one tablespoon of Cajun seasoning.
  3. Place the salmon skin side down and cook for about 4-5 minutes per side until golden brown and cooked through.
  4. Remove from the skillet and set aside.
Cooking Shrimp and Vegetables
  1. In the same skillet, add garlic, bell pepper, and onion. Stir for about 2-3 minutes until softened.
  2. Add the shrimp and remaining Cajun seasoning, cooking until shrimp are pink and opaque, about 3-4 minutes.
Finishing Touches
  1. Stir in cherry tomatoes and sauté until just soft.
  2. Drizzle with lime juice and toss everything together.
  3. Nestle the cooked salmon back into the skillet and let soak up flavors for about a minute.
Serving
  1. Plate the dish and sprinkle with fresh parsley.
  2. Serve and enjoy!

Notes

Customize the dish by swapping out proteins or veggies. For more heat, add cayenne pepper or jalapeños.
