  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped fresh jalapeños (seeded for less heat, if desired)
  • 1/4 cup finely chopped onion
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh cilantro (optional for garnish)
  • 1/2 cup BBQ sauce (for dipping) because what’s a popper without a little dip?

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the ground beef (or turkey), cheddar cheese, breadcrumbs, jalapeños, onion, garlic powder, salt, and black pepper.
  3. Mix everything together using your hands, being careful not to over-mix.
  4. Form the mixture into small meatballs, about the size of a golf ball.
  5. Place the meatballs on a baking sheet lined with parchment paper, ensuring they have space to breathe.
Cooking
  1. Bake for 20-25 minutes, or until they are golden and cooked through.
  2. Serve hot, drizzled with BBQ sauce and topped with fresh cilantro.

Notes

Adjust the heat of the poppers according to your preference by modifying the jalapeño content. These meatballs can be made a day ahead and stored in the fridge until ready to bake.
