  • 1 pound chicken breast, diced
  • 1 tablespoon olive oil For cooking the chicken
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • to taste Salt and pepper
  • 1 cup cooked rice Can be leftover or freshly made
  • 1 cup shredded cheese Cheddar, Monterey Jack, or pepper jack
  • 0.5 cup sour cream For creaminess
For Assembly
  • 4 large tortillas Flour or corn
  • to taste Fresh salsa For topping
  • to taste Fresh cilantro Optional garnish

Method
 

Cooking the Chicken
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the diced chicken and sprinkle it with chili powder, cumin, garlic powder, onion powder, salt, and pepper.
  3. Cook until the chicken is cooked through and no longer pink, about 7-10 minutes, stirring occasionally.
Mixing the Filling
  1. In a large bowl, combine the cooked chicken with the rice, shredded cheese, and sour cream.
  2. Mix until well combined.
Assembling the Burritos
  1. Lay out each tortilla on a clean surface.
  2. Spoon a generous amount of the chicken and cheese mixture onto the center of each tortilla.
  3. Fold in the sides and roll it up tightly from the bottom.
