Ingredients
  

Main Ingredients
  • 4 cups corn (fresh, frozen, or canned) Rinse and drain if using canned or frozen.
  • 1 cup shredded carrots
  • 1 each red bell pepper, diced
  • 1 each jalapeño, finely chopped Adjust the heat level to your liking.
  • 1/2 cup chopped red onion
Dressing
  • 1/2 cup mayonnaise Can substitute with Greek yogurt or vegan mayo.
  • 2 tablespoons lime juice
  • 1 tablespoon honey (or agave for a vegan version)
  • to taste Salt and pepper
Garnish
  • Fresh cilantro Optional for garnish.

Method
 

Preparation
  1. Rinse and drain the corn if you’re using canned or frozen.
  2. Chop the carrots, red bell pepper, jalapeño, and red onion.
Combine Ingredients
  1. In a large mixing bowl, toss together the corn, shredded carrots, diced bell pepper, jalapeño, and red onion.
Make the Dressing
  1. In a separate bowl, whisk together the mayonnaise, lime juice, honey, and a pinch of salt and pepper. Adjust sweetness and seasoning to your preference.
Combine and Chill
  1. Pour the dressing over the veggie mixture and toss to combine.
  2. Cover and let it chill in the fridge for about 30 minutes.
Serve
  1. Just before serving, give your slaw a final stir, garnish with fresh cilantro if desired, and enjoy.

Notes

For variations, try adding black beans or diced avocado for an extra boost. This dish tastes better the next day, so consider making it ahead.
