For the Chicken
  • 1 lb chicken breast, sliced thinly
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced Adjust to taste
  • 1 tablespoon ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon chili sauce Adjust based on your spice level
  • Salt and pepper to taste
For the Veggies
  • 2 cups mixed bell peppers, sliced Use red, green, and yellow for a colorful dish
  • 1 cup broccoli florets
  • 1 cup snap peas If available, for added crunch
For Serving
  • 3 cups cooked rice Use white or brown
  • Sesame seeds for garnish Optional
  • Chopped green onions For garnish

Method
 

Cooking Steps
  1. In a large pan or wok, heat the vegetable oil over medium-high heat.
  2. Add the sliced chicken to the pan, seasoned with salt and pepper. Cook until browned and fully cooked through, about 5-7 minutes.
  3. Toss in the minced garlic and grated ginger. Stir and cook for another minute until fragrant.
  4. Add the sliced bell peppers, broccoli florets, and snap peas. Stir-fry for about 3-4 minutes until the veggies are tender yet still crisp.
  5. Pour in the soy sauce and chili sauce. Toss everything to combine and cook for another minute until everything is heated through.
  6. Serve the stir-fry over a generous bed of rice. Garnish with sesame seeds and green onions.

Notes

Prep chicken and veggies ahead of time for quicker cooking. Customize with your favorite vegetables. Store leftovers in an airtight container for up to three days.
