Spicy Honey Ginger Chicken Bowls

Ingredients
  

For the chicken marinade
  • 1 pound chicken breast, diced
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh ginger, minced The more, the merrier!
  • 1 tablespoon garlic, minced
  • 1 teaspoon chili paste Add more for an extra kick!
  • 1 tablespoon sesame oil
For the bowl assembly
  • 2 cups mixed vegetables (bell peppers, broccoli, snap peas) Use any veggies on hand!
  • 2 cups cooked rice (white or brown) Your choice!
  • to taste fresh cilantro for garnish Optional but recommended

Method
 

Marinating the Chicken
  1. In a bowl, mix the honey, soy sauce, minced ginger, garlic, and chili paste. Toss the diced chicken in this mixture, and let it marinate for at least 15 minutes.
Cooking the Chicken
  1. In a large skillet, heat sesame oil over medium-high heat. Once hot, add the marinated chicken, and cook until it’s browned and cooked through—about 5-7 minutes.
Adding Veggies
  1. Toss in your mixed vegetables and stir-fry for another 3-4 minutes, until everything is tender but still has a nice crunch.
Assembling the Bowls
  1. Spoon the cooked rice into bowls, and top it with the spicy honey ginger chicken and veggies. Drizzle any remaining sauce over the top for that extra flavor pop, and garnish with fresh cilantro.

Notes

Feel free to use any veggies you have on hand. Add crushed red pepper for extra spice. If the sauce looks lumpy, that's just the love coming through!
