Ingredients
  

Main Ingredients
  • 1 pound Chicken Breast, diced Feel free to swap for tofu if you’re feeling adventurous!
  • ¼ cup Honey The sweet will balance the spice!
  • ¼ cup Soy Sauce Or tamari for a gluten-free option.
  • 1 tablespoon Fresh Ginger, grated Trust me; this is the real deal.
  • 2 cloves Garlic, minced
  • 2 tablespoons Sriracha or chili paste Adjust based on your spice tolerance.
  • 2 tablespoons Vegetable Oil
  • 1 cup Rice, cooked White or brown, ready to go.
  • 2 cups Mixed Veggies (like bell peppers, broccoli, and carrots) Colorful equals happy!
  • Sesame seeds As needed, for garnish.
For the Yum Yum Sauce
  • ½ cup Mayonnaise
  • 1 tablespoon Sriracha Or more if you like the heat.
  • 1 tablespoon Rice Vinegar
  • 1 teaspoon Sugar For a hint of sweetness.
  • 1-2 tablespoons Water To thin out the sauce a bit.

Method
 

Marinate the Chicken
  1. In a medium bowl, combine honey, soy sauce, ginger, garlic, and Sriracha. Toss the diced chicken in this flavorful marinade and let it sit for at least 15 minutes.
  2. If you're short on time, go ahead and use it right away; it’ll still be delicious!
Cook the Chicken
  1. In a large skillet, heat up the vegetable oil over medium-high heat.
  2. Add the marinated chicken to the skillet in a single layer. Cook until browned and cooked through, about 5-7 minutes, flipping once.
  3. The smell will have you salivating!
Sauté the Veggies
  1. Once the chicken is done, remove it from the skillet and toss in your mixed veggies.
  2. Sauté for about 5 minutes or until they’re tender-crisp. You’ll want some crunch in there!
Prepare the Yum Yum Sauce
  1. While your veggies are cooking, mix the Yum Yum sauce ingredients in a small bowl until smooth.
Assemble the Bowls
  1. Start with a generous scoop of rice at the bottom.
  2. Top it off with the spicy chicken and sautéed veggies.
  3. Drizzle a good amount of Yum Yum sauce over the top and finish with a sprinkle of sesame seeds.
  4. Voila!

Notes

Tips: You can swap the veggies based on your family's preferences. Store leftovers in an airtight container in the fridge for up to three days.
