Marinate the Chicken
- In a medium bowl, combine honey, soy sauce, ginger, garlic, and Sriracha. Toss the diced chicken in this flavorful marinade and let it sit for at least 15 minutes.
- If you're short on time, go ahead and use it right away; it’ll still be delicious!
Cook the Chicken
- In a large skillet, heat up the vegetable oil over medium-high heat.
- Add the marinated chicken to the skillet in a single layer. Cook until browned and cooked through, about 5-7 minutes, flipping once.
- The smell will have you salivating!
Sauté the Veggies
- Once the chicken is done, remove it from the skillet and toss in your mixed veggies.
- Sauté for about 5 minutes or until they’re tender-crisp. You’ll want some crunch in there!
Prepare the Yum Yum Sauce
- While your veggies are cooking, mix the Yum Yum sauce ingredients in a small bowl until smooth.
Assemble the Bowls
- Start with a generous scoop of rice at the bottom.
- Top it off with the spicy chicken and sautéed veggies.
- Drizzle a good amount of Yum Yum sauce over the top and finish with a sprinkle of sesame seeds.
- Voila!
