- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the ground meat, cheddar cheese, chopped jalapeños, breadcrumbs, egg, garlic powder, onion powder, salt, and pepper. Mix until well incorporated.
- Shape the mixture into bite-sized meatballs (about 1 inch in diameter) and place them on a baking sheet lined with parchment paper.
- Bake in the preheated oven for about 18-20 minutes, or until golden brown and cooked through.
- Let the meatballs cool for a few minutes, then serve warm, optionally garnished with fresh cilantro.
Notes
For a spicier kick, don't remove the seeds from the jalapeños. You can prepare the meatballs in advance and store them in the fridge. Leftovers can be chopped and added to soups or salads.
