For the Chicken
  • 1 pound boneless, skinless chicken thighs (or breasts if you prefer)
  • 1 tablespoon vegetable oil
  • 2 tablespoons gochujang (Korean chili paste)
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 3 cloves garlic, minced
  • 1 pinch black pepper
For the Cheesy Goodness
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 Green onions, chopped, for garnish (optional)
  • 1 Sesame seeds, for garnish (optional)

Preparation
  1. Start by cutting your chicken into bite-sized pieces.
Cooking
  1. Heat the vegetable oil in a large skillet over medium-high heat.
  2. Add the chicken and cook until browned and cooked through, about 5-7 minutes.
  3. In a small bowl, whisk together the gochujang, soy sauce, honey, rice vinegar, garlic, and black pepper.
  4. Pour the sauce over the chicken in the skillet, mixing well to coat.
  5. Sprinkle the mozzarella and Parmesan atop the saucy chicken and cover the skillet for 2-3 minutes to melt the cheese.
  6. Serve over cooked rice or noodles, garnished with green onions and sesame seeds.

Notes

Adjust the heat by modifying the amount of gochujang. Leftovers can be stored in an airtight container for up to 3 days. Excellent for meal prep.
