Spicy Pineapple Chicken Tacos

Ingredients
  

For the Taco Filling
  • 1 pound boneless, skinless chicken thighs or breasts
  • 1 cup fresh pineapple, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil
For the Jalapeño Basil Ranch
  • 1 cup plain Greek yogurt or sour cream, if you prefer a classic twist
  • 1 tablespoon fresh jalapeño, finely chopped adjust based on your spice tolerance
  • ¼ cup fresh basil, chopped
  • 1 tablespoon lemon juice
  • to taste salt and pepper
To Assemble
  • 8 small corn or flour tortillas
  • to taste fresh cilantro, for garnish
  • to taste lime wedges, for serving

Method
 

Preparation
  1. Start by cutting your chicken into bite-sized pieces.
  2. In a bowl, combine the chicken with soy sauce, chili powder, cumin, salt, and pepper. Let it marinate for at least 15 minutes.
Cooking
  1. Heat the olive oil in a skillet over medium heat.
  2. Add the marinated chicken and cook for about 5-7 minutes or until fully cooked.
  3. Toss in the fresh pineapple chunks during the last couple of minutes.
Ranch Preparation
  1. In a small bowl, whisk together Greek yogurt, jalapeño, basil, lemon juice, and a pinch of salt and pepper.
Assembly
  1. Warm your tortillas in a dry pan for about 30 seconds on each side until toasty.
  2. Start with a tortilla, spoon in the spicy pineapple chicken, drizzle with jalapeño ranch, and top with fresh cilantro.
  3. Squeeze some lime over everything to really bring life to your tacos!

Notes

For picky eaters, substitute pineapple with bell peppers or shredded cabbage. The chicken and ranch can be made ahead of time for meal prep.
