Ingredients
  

For the Shrimp and Veggies
  • 1 lb large shrimp, peeled and deveined
  • 1 cup sugar snap peas or snap peas
  • 1 red bell pepper, sliced
  • 3 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 2 tablespoons honey or agave
  • 1 juice of lime
  • 2 tablespoons olive oil
  • 1 teaspoon red pepper flakes adjust to spice preference
  • Salt and pepper, to taste
For Serving
  • 2 cups cooked jasmine or basmati rice
  • Optional toppings: sesame seeds, cilantro, or avocado slices

Preparation
  1. Prepare the rice according to package instructions.
Cooking
  1. In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds.
  2. Add the shrimp, seasoning with salt, pepper, and red pepper flakes. Cook for about 2-3 minutes until shrimp is pink and opaque.
  3. Stir in the sliced red bell pepper and sugar snap peas. Cook for an additional 3-4 minutes until veggies are tender but still crisp.
  4. Add soy sauce, honey, and lime juice, stirring to coat all ingredients. Simmer for another minute.
  5. Serve the shrimp mixture over a scoop of rice and top with green onions or sesame seeds if desired.

Notes

You can customize the spice level by adjusting the red pepper flakes. Leftovers can be used in a shrimp salad.
