  • 8 oz spaghetti Use any type of pasta you prefer.
  • 2 cups shredded cooked chicken Great way to use leftovers!
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced green bell pepper
  • 1/4 cup diced onion
  • 1 cup diced tomatoes with green chilies Adds flavor and spice!
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp cayenne pepper Adjust based on your spice tolerance.
  • 1/2 cup grated Parmesan cheese For topping.

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Cook the spaghetti in a large pot of boiling salted water until al dente. Drain and set aside.
  3. In a large bowl, combine cooked spaghetti, chicken, cream of chicken soup, sour cream, cheddar cheese, green bell pepper, onion, diced tomatoes, garlic powder, salt, pepper, and cayenne pepper. Mix everything together until well combined.
Baking
  1. Pour the mixture into a greased 9×13-inch baking dish and sprinkle the Parmesan cheese over the top.
  2. Bake in the preheated oven for about 30 minutes or until the cheese is bubbly and golden.
  3. Allow the casserole to sit for about 5 minutes before serving.

Notes

Make Ahead: Assemble the casserole ahead of time, cover, and refrigerate. Add 10 minutes to the baking time. For a spicier version, add jalapeños or hot sauce.
