Method
Marinate the Chicken
- Combine the soy sauce, sweet chili sauce, lime juice, minced garlic, minced ginger, red pepper flakes, and vegetable oil in a mixing bowl.
- Add the chicken cubes, making sure they are well coated. Let it marinate for at least 30 minutes.
Skewer and Grill
- Thread the marinated chicken onto the skewers, aiming for 4-5 pieces per skewer.
- Preheat your grill (or grill pan) over medium-high heat.
- Place your skewers on the grill and cook for about 10-15 minutes, turning occasionally until the chicken is cooked through.
Serve and Enjoy!
- Remove the skewers from the grill and let them rest for a couple of minutes.
- Plate them up with fresh cilantro or a side of steamed veggies.
Notes
Don’t skip the marinade! If you’re in a pinch, a 15-minute soak can do wonders. Adjust the spice level by using more or less red pepper flakes. If the chicken starts to stick to the grill, give it a little more time.
