Ingredients
  

For the Marinade
  • 3 tablespoons soy sauce
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon lime juice
  • 2 teaspoons garlic, minced
  • ½ teaspoon ginger, minced
  • 1 teaspoon red pepper flakes Adjust based on your spice tolerance
  • 1 tablespoon vegetable oil
For the Skewers
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized cubes
  • Skewers If using wooden ones, soak them in water for 30 minutes before grilling

Method
 

Marinate the Chicken
  1. Combine the soy sauce, sweet chili sauce, lime juice, minced garlic, minced ginger, red pepper flakes, and vegetable oil in a mixing bowl.
  2. Add the chicken cubes, making sure they are well coated. Let it marinate for at least 30 minutes.
Skewer and Grill
  1. Thread the marinated chicken onto the skewers, aiming for 4-5 pieces per skewer.
  2. Preheat your grill (or grill pan) over medium-high heat.
  3. Place your skewers on the grill and cook for about 10-15 minutes, turning occasionally until the chicken is cooked through.
Serve and Enjoy!
  1. Remove the skewers from the grill and let them rest for a couple of minutes.
  2. Plate them up with fresh cilantro or a side of steamed veggies.

Notes

Don’t skip the marinade! If you’re in a pinch, a 15-minute soak can do wonders. Adjust the spice level by using more or less red pepper flakes. If the chicken starts to stick to the grill, give it a little more time.
