  • 1 cup 1 cup fresh spinach Spirited and green.

  • 1/2 cup 1/2 cup dried cranberries A sweet surprise layered throughout.
  • 1/4 cup 1/4 cup pine nuts Crunchy and nutty.
  • 3 large 3 large eggs Binds everything together.
  • 1 cup 1 cup milk For a rich custard.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the eggs and milk, whisking until light. Add salt and pepper to taste.
Layering
  1. Sprinkle the spinach evenly over the pie crust, followed by crumbled feta, cranberries, and pine nuts.
  2. Pour the egg mixture gently over the top.
Baking
  1. Bake the quiche in the oven for about 35-40 minutes, until the center is set and lightly golden. Cover edges with foil if they brown too quickly.
  2. Let it cool for a few minutes before serving.

Notes

Customize by substituting feta with goat cheese or cheddar. Can be prepared the night before and baked in the morning. For a healthier twist, try a crustless version.
