  • 1 lb ground beef (or a mix of beef and turkey) Use ground turkey for a leaner option.
  • 1 cup fresh spinach, chopped Can substitute with other leafy greens.
  • 3 cloves garlic, minced Adjust amount to taste.
  • 1 cup breadcrumbs Use gluten-free breadcrumbs for a gluten-free option.
  • 1 large egg Acts as a binder.
  • 1 cup shredded mozzarella cheese Cheese can be adjusted for taste.
  • 1 tbsp Italian seasoning
  • to taste Salt and pepper
  • 1 tbsp olive oil for cooking Can use other oils if preferred.
  • to taste Marinara sauce for serving (optional) Highly recommended.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground beef, chopped spinach, minced garlic, breadcrumbs, egg, Italian seasoning, and a sprinkle of salt and pepper. Mix until well combined.
  3. Take a small handful of the meat mixture, flatten it in your palm, and place a teaspoon of shredded mozzarella in the center. Fold the meat around the cheese and roll into a ball. Repeat until the mixture is used.
Cooking
  1. Heat a tablespoon of olive oil in a large skillet over medium heat. Once hot, add the meatballs and brown them on all sides for about 3-4 minutes.
  2. Transfer the browned meatballs to a baking sheet and bake in the preheated oven for about 15-20 minutes, or until cooked through and the cheese is gooey.
Serving
  1. Serve the meatballs with marinara sauce for dipping or toss them with spaghetti.

Notes

Add red pepper flakes for a spicy kick. These meatballs freeze well for easy meal prep, and leftovers make great sandwiches or salad toppings.
