Preparation
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the ground beef, chopped spinach, minced garlic, breadcrumbs, egg, Italian seasoning, and a sprinkle of salt and pepper. Mix until well combined.
- Take a small handful of the meat mixture, flatten it in your palm, and place a teaspoon of shredded mozzarella in the center. Fold the meat around the cheese and roll into a ball. Repeat until the mixture is used.
Cooking
- Heat a tablespoon of olive oil in a large skillet over medium heat. Once hot, add the meatballs and brown them on all sides for about 3-4 minutes.
- Transfer the browned meatballs to a baking sheet and bake in the preheated oven for about 15-20 minutes, or until cooked through and the cheese is gooey.
Serving
- Serve the meatballs with marinara sauce for dipping or toss them with spaghetti.
Notes
Add red pepper flakes for a spicy kick. These meatballs freeze well for easy meal prep, and leftovers make great sandwiches or salad toppings.
