Ingredients
  

Meatball Mixture
  • 1 pound ground beef (or turkey)
  • 1 cup fresh spinach, chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • ½ cup breadcrumbs
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon Italian seasoning
  • 1 cup mozzarella cheese, cut into small cubes
  • Olive oil for frying
  • Marinara sauce for serving Optional, for serving.

Method
 

Preparation
  1. In a large bowl, combine the ground beef, chopped spinach, minced garlic, egg, breadcrumbs, salt, pepper, and Italian seasoning. Mix with your hands until well blended.
  2. Take a small handful of the meat mixture and flatten it into a patty. Place a cube of mozzarella in the center, then wrap the meat around it, forming it into a ball. Repeat until you’ve used all the meat mixture.
Cooking
  1. In a skillet, heat some olive oil over medium heat. Add the meatballs and cook them for about 5-7 minutes, turning occasionally until they’re brown and cooked through.
  2. Serve the meatballs with a generous amount of marinara sauce ladled over them. Optionally, sprinkle more mozzarella on top.

Notes

If the mixture is sticky, add a little water to your hands when shaping the meatballs. For baking, cook at 400°F for about 20 minutes on a lined baking sheet. These meatballs can also be frozen before cooking for later use.
