Filling Ingredients
  • 2 cups fresh spinach Can use frozen if needed.
  • 1 cup ricotta cheese The creamier, the better!
  • 1/2 cup grated Parmesan cheese Adds richness.
  • 1 large egg Acts as a binder.
  • 1/2 teaspoon garlic powder Or use fresh minced garlic.
  • to taste Salt and pepper
Pastry Ingredients
  • 1 package puff pastry Store-bought is okay.
  • to taste Olive oil For brushing on top.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. If using fresh spinach, rinse and cook briefly in a pan until wilted (3-5 minutes). If using frozen, thaw and squeeze out excess water.
  3. In a large bowl, mix the cooked spinach, ricotta cheese, Parmesan cheese, egg, garlic powder, salt, and pepper until well combined.
  4. Roll out the puff pastry on a floured surface to your desired thickness.
  5. Cut the pastry into 3x3 inch squares and place a spoonful of the spinach mixture in the center.
  6. Fold the pastry over to form triangles and press edges with a fork to seal. Brush the tops with olive oil.
Baking
  1. Bake in the preheated oven for 20-25 minutes or until puffy and golden brown.
  2. Let cool for a few minutes before serving.

Notes

Enjoy experimenting with different fillings like kale or sun-dried tomatoes. Leftovers can be stored in an airtight container in the fridge for up to 3 days, or frozen before baking.
