Preparation
- Preheat the oven to 400°F (200°C).
- If using fresh spinach, rinse and cook briefly in a pan until wilted (3-5 minutes). If using frozen, thaw and squeeze out excess water.
- In a large bowl, mix the cooked spinach, ricotta cheese, Parmesan cheese, egg, garlic powder, salt, and pepper until well combined.
- Roll out the puff pastry on a floured surface to your desired thickness.
- Cut the pastry into 3x3 inch squares and place a spoonful of the spinach mixture in the center.
- Fold the pastry over to form triangles and press edges with a fork to seal. Brush the tops with olive oil.
Baking
- Bake in the preheated oven for 20-25 minutes or until puffy and golden brown.
- Let cool for a few minutes before serving.
Notes
Enjoy experimenting with different fillings like kale or sun-dried tomatoes. Leftovers can be stored in an airtight container in the fridge for up to 3 days, or frozen before baking.
