  • 1 package puff pastry (thawed)
  • 2 cups fresh spinach baby spinach is great!
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 whole egg (lightly beaten) reserve half for egg wash
  • 1 clove garlic (minced)
  • Salt and pepper to taste
  • Cooking spray or olive oil for greasing
Optional Ingredients
  • A sprinkle of nutmeg adds that little something special
  • Marinara sauce for dipping because who doesn’t love a good sauce?

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Heat a pan over medium heat and add a splash of olive oil. Toss in the minced garlic and sauté for about a minute until fragrant.
  3. Add the spinach and cook until wilted. Set aside to cool.
  4. In a bowl, combine the cooked spinach, ricotta cheese, Parmesan cheese, half of the beaten egg, and a pinch of salt and pepper. Optionally, add a dash of nutmeg.
  5. On a floured surface, roll out the puff pastry and cut it into squares or rectangles.
  6. Place a generous spoonful of the spinach mixture on each square, fold over, and seal the edges by crimping with a fork.
  7. Brush the tops of your rolls with the remaining beaten egg.
Baking
  1. Arrange the rolls on a greased baking sheet and bake for about 20-25 minutes or until puffed and golden brown.
Serving
  1. Serve the Spinach & Ricotta Rolls warm with marinara sauce for dipping.

Notes

If your rolls are leaking, squeeze out excess moisture from the ricotta before mixing. You can prepare these rolls ahead of time, freeze them before baking, and pop them into the oven when ready.
