  • 1 can (15 oz) black beans Rinsed and drained.
  • 1 cup corn Can be frozen, canned, or fresh.
  • 1 cup salsa Choose spicy or mild based on preference.
  • 1 cup shredded cheese Cheddar is classic, consider mixing other types.
Seasonings

For Sauteing
  • 1 tablespoon olive oil For sautéing the filling.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) to prepare for roasting.
  2. Slice off the tops of the bell peppers and scoop out the seeds.
Cooking
  1. In a skillet, heat a drizzle of olive oil over medium heat and add the ground turkey. Cook until browned.
  2. Stir in the cooked rice, black beans, corn, salsa, and seasonings. Let simmer for about 5-7 minutes, adjusting seasoning as necessary.
  3. Stuff the mixture tightly into each pepper and place in a baking dish. Top with shredded cheese.
  4. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is melted.
Serving
  1. Place the pepper tops back on for added spookiness and serve with extras like sour cream or salad.

Notes

You can prepare the stuffing ahead of time and store it in the fridge. For picky eaters, consider blending in extra vegetables. Feel free to mix different cheeses for added flavor.
