Preparation

- Slice off the tops of the bell peppers and scoop out the seeds.
Cooking
- In a skillet, heat a drizzle of olive oil over medium heat and add the ground turkey. Cook until browned.
- Stir in the cooked rice, black beans, corn, salsa, and seasonings. Let simmer for about 5-7 minutes, adjusting seasoning as necessary.
- Stuff the mixture tightly into each pepper and place in a baking dish. Top with shredded cheese.
- Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 10-15 minutes until cheese is melted.

- Place the pepper tops back on for added spookiness and serve with extras like sour cream or salad.
