Ingredients
  

For the skillet
  • 1 pound Italian sausage (or your favorite sausage)
  • 2 cups asparagus, trimmed and cut into bite-sized pieces
  • 1 cup cherry tomatoes, halved
  • 1 cup sweet bell peppers, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced Garlic makes everything better!
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • for garnish Fresh basil or parsley Optional but highly recommended.

Preparation
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the sausage and break it apart using a spatula, cooking until browned and no longer pink, about 5-7 minutes.
  3. Add the chopped onion and garlic, sautéing for about 2-3 minutes until the onion is translucent and the garlic is fragrant.
  4. Toss in the asparagus, bell peppers, and cherry tomatoes. Stir everything together and cook for another 5-7 minutes until the veggies are tender but still crisp. Season with salt and pepper to your liking.
  5. Transfer the skillet to the table and sprinkle with fresh basil or parsley. Serve and enjoy!

Notes

Feel free to switch up the sausage type. Turkey sausage is a lighter option. Add a dash of red pepper flakes for some heat if you like spice! Don't worry if your sauce looks a little lumpy; it’s part of the magic!
