Cooking Instructions
- Preheat the oven to 400°F (200°C). Scrub the potatoes and poke a few holes in them.
- Bake the potatoes directly on the oven rack for about 45-60 minutes until fork-tender.
- Heat the olive oil in a large skillet over medium heat. Add the diced steak, season with salt and pepper, and cook until browned (about 5-7 minutes). Remove and set aside.
- In the same skillet, sauté the shrimp and sliced mushrooms until the shrimp are pink and cooked through (about 4 minutes). Mix in the cooked steak.
- Once the potatoes are done, carefully slice them open and fluff the insides with a fork. Load with the steak, shrimp, and mushroom mixture.
- Top generously with shredded cheese, dollop with sour cream, and sprinkle with green onions.
- Return the loaded potatoes to the oven for about 5 minutes to melt the cheese.
Notes
For crispy skin, rub potatoes with olive oil and sea salt before baking. You can prepare stuffing ahead of time and reheat when ready.
