Steak, Shrimp & Mushroom Loaded Baked Potatoes

Ingredients
  

For the Loaded Baked Potatoes
  • 4 large russet potatoes Scrubbed and poked with holes
  • 1 pound steak (sirloin or your choice), diced
  • 1 pound shrimp, peeled and deveined
  • 8 ounces mushrooms, sliced
  • 1 cup shredded cheese (cheddar) Cheddar works wonders!
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped For garnish
  • 2 tablespoons olive oil
  • to taste salt
  • to taste pepper

Method
 

Cooking Instructions
  1. Preheat the oven to 400°F (200°C). Scrub the potatoes and poke a few holes in them.
  2. Bake the potatoes directly on the oven rack for about 45-60 minutes until fork-tender.
  3. Heat the olive oil in a large skillet over medium heat. Add the diced steak, season with salt and pepper, and cook until browned (about 5-7 minutes). Remove and set aside.
  4. In the same skillet, sauté the shrimp and sliced mushrooms until the shrimp are pink and cooked through (about 4 minutes). Mix in the cooked steak.
  5. Once the potatoes are done, carefully slice them open and fluff the insides with a fork. Load with the steak, shrimp, and mushroom mixture.
  6. Top generously with shredded cheese, dollop with sour cream, and sprinkle with green onions.
  7. Return the loaded potatoes to the oven for about 5 minutes to melt the cheese.

Notes

For crispy skin, rub potatoes with olive oil and sea salt before baking. You can prepare stuffing ahead of time and reheat when ready.
