Ingredients
  

For the Chicken
  • 1 pound boneless, skinless chicken thighs, chopped into bite-sized pieces
  • 1/4 cup cornstarch
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
For the Sticky Orange Sauce
  • 1/2 cup orange juice (freshly squeezed if you’re feeling fancy)
  • 1 zest from one orange for extra zing
  • 1/4 cup soy sauce
  • 1/4 cup honey (or maple syrup for a vegan spin)
  • 1 tablespoon rice vinegar
  • 1 tablespoon ginger, minced
  • 2 cloves garlic, minced
For the Yum Yum Sauce
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 1/4 teaspoon paprika
  • A pinch of cayenne pepper (optional for a spicy kick)
To Serve
  • Cooked rice (white, brown, or even cauliflower rice for the health-conscious)
  • Chopped green onions for garnish
  • Sesame seeds for garnish

Method
 

Preparation
  1. Season the chicken pieces with salt and pepper. Toss the chicken in cornstarch until lightly coated.
Cooking the Chicken
  1. Heat the vegetable oil in a large pan over medium-high heat. Add the chicken and sauté until golden brown and cooked through, about 7-8 minutes.
Making the Sticky Orange Sauce
  1. In a bowl, combine orange juice, zest, soy sauce, honey, rice vinegar, ginger, and garlic. Whisk until well combined. Pour this mixture over the cooked chicken and let it simmer for about 5 minutes until thickened.
Whipping Up the Yum Yum Sauce
  1. In a separate bowl, mix mayonnaise, ketchup, rice vinegar, sugar, paprika, and cayenne pepper (if using). Taste and adjust as desired.
Assembly
  1. Serve the sticky orange chicken over a bed of rice. Drizzle with Yum Yum Sauce, sprinkle with green onions and sesame seeds.

Notes

Don’t stress if your sauce is slightly lumpy; it’s all about flavor. For meal prep, make extra for lunch the next day as this dish reheats wonderfully. Add in some veggies like bell peppers or broccoli when cooking the chicken for a healthier version.
