For the Chicken
  • 1 pound chicken thighs, boneless and skinless Cut into bite-sized pieces
  • 1/4 cup cornstarch For coating the chicken
  • Salt and pepper To taste
  • 1 tablespoon vegetable oil For sautéing
For the Sauce
  • 1/2 cup orange juice Freshly squeezed is best
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Zest of one orange orange zest
For the Yum Yum Sauce
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon sriracha Optional, for a kick
  • 1 tablespoon water
  • 1 teaspoon garlic powder
  • Salt To taste
For Assembly
  • Cooked rice (white or brown) As desired
  • Chopped green onions For garnish
  • Sesame seeds For garnish

Method
 

Preparation
  1. Cut the chicken thighs into bite-sized pieces and coat them with cornstarch, salt, and pepper.
Cooking the Chicken
  1. In a large skillet, heat vegetable oil over medium-high heat. Add the chicken and cook until golden brown and crispy for about 5-7 minutes.
Making the Sauce
  1. In a bowl, combine orange juice, soy sauce, honey, orange zest, rice vinegar, garlic, and ginger. Pour this over the cooked chicken and stir until coated and sauce thickens (about 2-3 minutes).
Whipping Up the Yum Yum Sauce
  1. In a small bowl, mix mayonnaise, ketchup, sriracha, water, garlic powder, and salt. Adjust to taste.
Assembly
  1. Layer cooked rice in bowls, top with sticky orange chicken, drizzle with Yum Yum sauce, and garnish with green onions and sesame seeds.

Notes

If you like extra crunch, consider double frying the chicken or letting it rest before adding the sauce. This recipe is flexible; feel free to add veggies like broccoli or bell peppers.
