Preparation
- Preheat your oven to 325°F (160°C).
- In a bowl, mix the graham cracker crumbs, melted butter, and sugar until it resembles damp sand. Press this mixture into the bottom of a 9-inch springform pan.
- Bake the crust for about 10 minutes or until golden brown. Let it cool.
Make the Cheesecake Filling
- In a large mixing bowl, beat the softened cream cheese until smooth using an electric mixer.
- Gradually add in the sugar and mix until combined.
- Add the vanilla extract and mix.
- Add the eggs one at a time, mixing just until incorporated.
- Fold in the sour cream.
Bake the Cheesecake
- Pour the filling into the cooled crust and smooth the top.
- Bake for about 50-60 minutes, or until edges are set with a slight jiggle in the center.
- Turn off the oven, crack open the door, and let the cheesecake cool in the oven for an hour.
Prepare the Strawberry Topping
- Mix the sliced strawberries with sugar and lemon juice in a bowl.
- Let them macerate for about 30 minutes.
Assemble Your Cheesecake
- Once cooled, top the cheesecake with strawberries and chill in the refrigerator for at least 4 hours or overnight.
Serve and Enjoy
- Unclip the sides of the springform pan and slice the cheesecake.

Notes
No Springform Pan? Use a pie dish lined with parchment for easy removal. Fresh strawberries are ideal, but frozen can be used if drained well.
