Ingredients
  

For the crust
  • 1.5 cups graham cracker crumbs
  • 0.5 cups unsalted butter, melted
  • 0.25 cups sugar
For the cheesecake filling
  • 32 oz cream cheese, softened 4 packages of 8 oz each
  • 1 cups sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cups sour cream
For the strawberry topping
  • 2 cups fresh strawberries, hulled and sliced
  • 0.25 cups sugar
  • 1 tablespoon lemon juice

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix the graham cracker crumbs, melted butter, and sugar until it resembles damp sand. Press this mixture into the bottom of a 9-inch springform pan.
  3. Bake the crust for about 10 minutes or until golden brown. Let it cool.
Make the Cheesecake Filling
  1. In a large mixing bowl, beat the softened cream cheese until smooth using an electric mixer.
  2. Gradually add in the sugar and mix until combined.
  3. Add the vanilla extract and mix.
  4. Add the eggs one at a time, mixing just until incorporated.
  5. Fold in the sour cream.
Bake the Cheesecake
  1. Pour the filling into the cooled crust and smooth the top.
  2. Bake for about 50-60 minutes, or until edges are set with a slight jiggle in the center.
  3. Turn off the oven, crack open the door, and let the cheesecake cool in the oven for an hour.
Prepare the Strawberry Topping
  1. Mix the sliced strawberries with sugar and lemon juice in a bowl.
  2. Let them macerate for about 30 minutes.
Assemble Your Cheesecake
  1. Once cooled, top the cheesecake with strawberries and chill in the refrigerator for at least 4 hours or overnight.

  1. Unclip the sides of the springform pan and slice the cheesecake.

Notes

No Springform Pan? Use a pie dish lined with parchment for easy removal. Fresh strawberries are ideal, but frozen can be used if drained well.
