- In a bowl, mix together the graham cracker crumbs, granulated sugar, and melted butter until you have a crumbly mixture resembling wet sand.
- Press the crumb mixture evenly into the bottom of an 8x8 inch baking dish. Make sure it’s packed and even.
- In another bowl, beat the softened cream cheese until smooth. Add the powdered sugar and vanilla extract, mixing until fluffy. Gently fold in the chopped strawberries.
- Spread the cheesecake mixture over the crust evenly.
- Cover with plastic wrap and refrigerate for at least 2-3 hours to allow it to set.
- Once chilled, cut into bite-sized squares and top with whipped cream if desired.

Letting the mixture chill is important for flavors to meld. Feel free to experiment with other fruit varieties like blueberries or raspberries.
