  • 1 box yellow cake mix
  • 1 can strawberry pie filling
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup butter, melted
  • 1 count egg (optional) For additional richness
  • to taste count fresh strawberries for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the yellow cake mix, melted butter, and optional egg. Mix until just combined.
  3. Spread the strawberry pie filling evenly across the bottom of a 9x13-inch baking dish.
  4. In another bowl, whip together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  5. Dollop the cheesecake mixture over the strawberry filling, spreading gently.
  6. Pour the cake batter over the cream cheese layer and sprinkle some extra cake mix on top if desired.
Baking
  1. Slide the dish into the oven and bake for about 30-40 minutes or until golden brown and a toothpick comes out clean.
  2. Once cooled, slice and serve. Garnish with fresh strawberries or whipped cream, if desired.

Notes

Lumps in the cake batter can add a rustic texture. Feel free to swap strawberry pie filling with blueberries or cherries.
