Ingredients
  

For the Cheesecake Filling
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1 cup whipped topping (Cool Whip works great!)
For the Crunch Topping
  • 1 cup Golden Oreos, crushed
  • 1/2 cup freeze-dried strawberries, crushed
  • 3 tbsp melted butter
For Assembly
  • to taste Fresh strawberries, sliced for topping

Method
 

Preparation
  1. In a large bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy.
  2. Fold in the whipped topping until fully combined.
Make the Crunch Topping
  1. Combine the crushed Golden Oreos, crushed freeze-dried strawberries, and melted butter in another bowl.
  2. Mix until all the crumbs are coated and look like little golden pebbles.
Fill Your Cups
  1. Take mini dessert cups (or use a muffin tin if preferred) and fill each cup with a generous scoop of the cheesecake filling.
  2. Sprinkle the cookie crunch topping over each one.
Add the Strawberries
  1. Top each bite with a slice of fresh strawberry.
Chill
  1. Place the cheesecake bites in the refrigerator for at least 2 hours.

  1. Once chilled, serve these delightful bites to your family or friends.

Notes

Make ahead and store in the fridge for up to two days. Substitute Golden Oreos with other cookies for variety. Don't stress over the crunch topping's appearance—it's about fun!
