Ingredients
  

For the Cheesecake Filling
  • 8 oz cream cheese (softened)
  • 1/2 cup powdered sugar
  • 1 cup whipped topping (thawed)
  • 1 tsp vanilla extract
For the Strawberry Crunch Topping
  • 1 cup strawberries (fresh or frozen, sliced)
  • 1 cup crushed graham crackers
  • 1/4 cup melted butter
  • 1/4 cup sugar

Method
 

Preparation
  1. In a medium bowl, mix the softened cream cheese and powdered sugar until smooth.
  2. Add in the whipped topping and vanilla extract, mixing until everything is well combined and creamy.
Make the Strawberry Crunch Topping
  1. In a separate bowl, combine the crushed graham crackers, melted butter, and sugar. Mix until the crumbs are evenly coated.
Layering
  1. In mini cups or small dessert glasses, add a layer of the cheesecake filling.
  2. Follow with a layer of strawberry slices and then a generous sprinkle of the graham cracker crunch.
  3. Repeat until the cups are nearly full, making sure to save some crunch for the top.
Chill and Serve
  1. Refrigerate the treats for at least an hour before serving.
  2. Garnish with a fresh strawberry slice before serving.

Notes

For frozen strawberries, thaw and drain them to avoid sogginess. Swap out graham crackers for crushed cookies or add a drizzle of chocolate for a twist. These can be made a day ahead, making them perfect for busy occasions.
