For the Cheesecake Layer
  • 8 oz cream cheese, softened Make sure it is at room temperature for easy mixing.
  • 1/3 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup whipped cream Use store-bought or homemade.
For the Strawberry Crunch Topping
  • 1 cup crushed strawberry shortcake cookies You can substitute with any strawberry-flavored cookies.
  • 1/4 cup unsalted butter, melted

Method
 

Preparation
  1. Line an 8x8-inch baking dish with parchment paper, leaving some overhang.
  2. In a mixing bowl, combine softened cream cheese, granulated sugar, and vanilla extract. Beat until smooth.
  3. Gently fold in the whipped cream until well combined.
  4. Pour the cheesecake filling into the prepared baking dish and spread evenly. Freeze while preparing the topping.
  5. In a separate bowl, mix crushed strawberry shortcake cookies with melted butter until it resembles wet sand.
  6. After the cheesecake layer has firmed up for about an hour, sprinkle the crunchy topping evenly over it.
  7. Return to the freezer for another hour or until fully set.
  8. Lift the cheesecake out of the pan using the parchment overhang and cut into squares to serve.

Notes

For best results, let the cheesecake layer firm up longer in the freezer. Consider adding fresh strawberries or a drizzle of chocolate for garnish.
