Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the strawberry cake mix, water, vegetable oil, and eggs. Mix on medium speed until well blended—about 2 minutes.
- Gently fold in the diced strawberries.
- In another bowl, beat the softened cream cheese, sugar, egg, and vanilla extract until smooth.
- Pour half of the strawberry batter into a greased 9x13 inch baking dish. Spread the cream cheese mixture on top and pour remaining strawberry batter over it.
- In a separate bowl, combine the plain cake mix, melted butter, and brown sugar. Sprinkle this mixture evenly over the cake batter.
Baking
- Bake for about 40-45 minutes, until a toothpick inserted in the center comes out clean.
- Allow the cake to cool for at least 20 minutes before serving.
Serving
- Top with fresh strawberries and a dollop of whipped cream if desired.
Notes
Don’t overmix the batter for a tender, fluffy cake. You can swap strawberries for other berries and elevate the cake with powdered sugar or chocolate sauce.
