Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 2 cups fresh spinach or mixed greens
  • 1 cup strawberries, sliced
  • 1/2 cup mandarin oranges (canned or fresh works!)
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled (optional, but highly recommended!)
  • 1/4 cup slivered almonds or walnuts (for that delightful crunch)
Dressing Ingredients
  • 1/4 cup Greek yogurt or mayonnaise
  • 1 tablespoon poppy seeds
  • 1 tablespoon honey
  • Salt and pepper to taste

Method
 

Preparation
  1. In a small bowl, whisk together Greek yogurt or mayonnaise, poppy seeds, honey, salt, and pepper.
  2. In a large bowl, combine the cooked chicken, spinach or greens, sliced strawberries, mandarin oranges, red onion, crumbled feta, and nuts. Toss gently to mix everything together.
  3. Drizzle your dressing over the salad and toss gently to coat.
  4. Plate the salad in beautiful bowls, adding extra strawberries on top for flair. Serve immediately or store in the fridge for later.

Notes

This salad can be made ahead, keeping the dressing separate until ready to eat. Feel free to swap fruits or omit nuts based on preferences.
