  • 2 cups strawberries, hulled and sliced Look for vibrant, red, and firm berries.
  • ½ cup walnuts Or pecans, if you prefer!
  • ½ cup feta cheese, crumbled Feel free to substitute with goat cheese or vegan cheese.
  • ½ medium red onion, thinly sliced
  • ¼ cup olive oil
  • 2 tablespoons apple cider vinegar Balsamic can be used as an alternative.
  • 1 tablespoon honey The magical ingredient that brings it all together!

Method
 

Preparation
  1. Start by rinsing your spinach under cold water. Pat them dry or toss in a salad spinner.
  2. Slice the strawberries into bite-sized pieces.
  3. Toast the walnuts in a small skillet over medium heat for about 3-5 minutes until fragrant.
Assembly
  1. In a large bowl, combine spinach, sliced strawberries, toasted walnuts, crumbled feta, and red onion.
  2. In another jar or small bowl, mix the olive oil, apple cider vinegar, honey, salt, and pepper. Shake or whisk until emulsified.
  3. Drizzle the dressing over the salad and toss gently.
  4. Plate the salad and serve.

Notes

If short on time, use pre-washed spinach or a salad mix. This salad can be customized with pears or grilled chicken. Store leftovers in an airtight container but eat the same day for best freshness.
