Preparation
  1. In a pot over medium heat, drizzle in olive oil. Add the diced onion and minced garlic; sauté until the onion is translucent, about 3-5 minutes.
  2. Toss in the ground beef or turkey, breaking it up with a spatula. Cook until browned, about 5-7 minutes.
  3. Stir in the diced bell peppers and cook for another 3 minutes.
  4. Pour in the diced tomatoes and broth; bring to a light simmer.
  5. Sprinkle in the Italian seasoning, salt, and pepper; adjust to taste.
  6. Stir in the cooked rice and cook for an additional 5 minutes for the flavors to blend.
  7. Ladle the soup into bowls, topping with optional shredded cheese if desired.
