Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the flour, granulated sugar, and salt. Add the cold, cubed butter and mix until it resembles coarse crumbs.
- Press this mixture firmly into the bottom of a greased 9x9 inch baking pan.
- Bake for 15-20 minutes or until golden brown.
- While the crust is baking, slice the peaches and make the filling by combining peaches, brown sugar, cornstarch, vanilla extract, lemon juice, and cinnamon in a bowl.
Baking
- Once the crust is done baking, let it cool for about 10 minutes.
- Pour the peach filling evenly over the crust.
- In another bowl, combine oats, brown sugar, flour, and melted butter until crumbly.
- Sprinkle this mixture generously on top of the peach layer.
- Return to the oven for another 25-30 minutes or until the topping is golden brown and the peach filling is bubbling.
- Allow to cool for at least 30 minutes before cutting.
Notes
You can substitute other fruits like blueberries or strawberries for a twist. For faster cooling, place in the fridge. Dust with powdered sugar before serving for extra charm.
