Ingredients
  

For the Sandwich
  • 4 slices slices of your favorite bread (sourdough recommended)
  • 1 cup ricotta cheese
  • ½ cup freshly chopped spinach
  • ¼ cup sun-dried tomatoes, chopped (oil-packed for extra flavor)
  • 1 teaspoon garlic powder
  • to taste salt and pepper
  • 2 tablespoons butter (for that golden crust)

Method
 

Preparation
  1. In a medium bowl, combine the ricotta cheese, spinach, sun-dried tomatoes, garlic powder, salt, and pepper. Mix until well combined. Taste and adjust the seasoning as needed.
  2. Take two slices of bread and spread a generous amount of the ricotta mixture on each. Top with the remaining two slices of bread.
  3. Spread butter generously on the outsides of the sandwiches.
Cooking
  1. In a skillet over medium heat, add the sandwiches and cook until both sides are golden and crispy, about 3-4 minutes per side, pressing gently with a spatula.
  2. Once cooked, remove the grilled cheese from the skillet, slice in half, and enjoy!

Notes

For extra crispy sandwiches, toast the bread slightly before adding the filling. Feel free to mix in mozzarella or provolone cheese for added flavor.
