Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
Wet Ingredients
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
Additions
  • 1 cup chopped pecans Plus extra for topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, mix the buttermilk, vegetable oil, eggs, and vanilla extract until combined.
  4. Gradually add the wet ingredients to the dry mix, stirring gently until just combined.
  5. Fold in the chopped pecans, adding extra for topping if desired.
Baking
  1. Pour the batter into a greased loaf pan and bake for 60-70 minutes.
  2. Check for doneness with a toothpick; it should come out clean.
Cooling
  1. Let the bread cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Check your oven for doneness; cover with foil if it browns too quickly. You can add chocolate chips or dried fruit for variations. Store leftovers in an airtight container for up to three days, or freeze after slicing.
