- Season the chicken thighs with salt and pepper.
Cooking
- In a large skillet over medium heat, add a splash of olive oil. Once hot, add the chicken and sear for about 5-7 minutes on each side until golden brown.
- In a bowl, mix together the cranberry sauce, soy sauce, honey, and minced garlic to create the glaze.
- Once the chicken is browned, pour the cranberry glaze over it. Reduce the heat to low, cover, and let it simmer for about 10-15 minutes.
- Once cooked through and the glaze has thickened, plate the chicken and garnish with fresh herbs if desired.
Notes
If the glaze doesn't come out perfect, it's okay; it adds to the homemade charm. You can adjust sweetness by adding more cranberry sauce or honey to taste. Store leftovers in an airtight container for up to 3 days.
