Preparation
- Start by giving those chicken thighs a good rinse and pat them dry with a paper towel.
- In a mixing bowl, combine the BBQ sauce, pineapple chunks, soy sauce, brown sugar, minced garlic, ginger, and red pepper flakes. Stir until well blended.
- Place the chicken thighs at the bottom of your slow cooker. Pour the sauce over the top.
Cooking
- Put the lid on your crockpot, set it to low, and cook for about 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, shred the chicken in the crockpot using two forks and toss to combine.
Serving
- Serve these bites on their own, or over rice or noodles. Garnish with fresh parsley if desired.
Notes
Prep the ingredients the night before for easy cooking. Spice it up with red pepper flakes for an extra kick.
