Ingredients
  

For the Crust and Crumble Topping
  • 2 cups all-purpose flour
  • 1 cup rolled oats
  • 1 cup brown sugar, packed
  • 1/2 cup unsalted butter, melted
  • 1/2 tsp baking soda
  • 1/2 tsp salt
For the Pineapple Filling
  • 2 cups fresh pineapple chunks (or canned) Canned can be used if fresh is not available.
  • 1/4 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1/2 tsp vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the flour, rolled oats, brown sugar, baking soda, and salt. Pour in the melted butter and stir until everything is crumbly but well-mixed.
  3. Press about 2/3 of the mixture into the bottom of a greased 9×9-inch baking pan.
  4. In another bowl, combine the pineapple chunks, granulated sugar, cornstarch, lemon juice, and vanilla extract. Stir gently to coat everything nicely.
  5. Spread the pineapple mixture evenly over the crust and sprinkle the remaining crumble on top.
Baking
  1. Bake for about 30-35 minutes, or until the top turns golden brown.
Cooling
  1. Let the bars cool completely before slicing them into squares.

Notes

You can substitute canned pineapple for fresh. These bars can be stored in an airtight container in the fridge for up to a week.
