Ingredients
  

For the filling
  • 2 medium sweet potatoes About 2 cups when mashed
  • 1 cup sugar Adjust to your sweetness level
  • 1 2 milk Can use almond or oat milk for a twist
  • 2 tablespoons unsalted butter Melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 2 nutmeg
  • 1 2 salt
For the crust
  • 1 prepared pie crust Store-bought or homemade

Method
 

Preparation
  1. Start by bringing a pot of water to a boil. Peel and cube the sweet potatoes, and add them to the pot.
  2. Boil until they are tender, about 15 minutes. Drain and mash them up in a bowl or use a food processor for a silky smooth texture.
Mixing
  1. In a large mixing bowl, combine the mashed sweet potatoes, sugar, milk, melted butter, eggs, vanilla extract, cinnamon, nutmeg, and salt.
  2. Use a hand mixer or a whisk for about 2 minutes until everything is well blended and creamy.
Baking
  1. Preheat your oven to 350°F (175°C). Pour the sweet potato mixture into your pie crust, smoothing out the top.
  2. Bake for about 55 to 60 minutes, or until the filling is firm and a toothpick inserted into the center comes out clean.
Cooling and Serving
  1. Let the pie cool for at least 30 minutes before cutting.
  2. Pair it with whipped cream or a scoop of vanilla ice cream for extra indulgence.

Notes

For a twist, try adding a tablespoon of bourbon to the filling! You can also make mini sweet potato pies in muffin tins.
