Ingredients
  

For the Pie Filling
  • 2 cups mashed sweet potatoes (about 2 medium sweet potatoes) Boil until fork-tender then mash.
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup evaporated milk
  • 2 large eggs Can be substituted with flaxseed meal or unsweetened applesauce for a vegan option.
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
For the Pie Crust
  • 1 piece ready-made pie crust Store-bought or homemade.

Method
 

Preparation
  1. Peel and cube the sweet potatoes. Boil in a pot of water until fork-tender, about 15-20 minutes. Drain and mash until smooth.
  2. In a large bowl, mix the mashed sweet potatoes, granulated sugar, brown sugar, evaporated milk, eggs, vanilla extract, cinnamon, nutmeg, and salt until well combined.
  3. If using a store-bought pie crust, unroll it into a 9-inch pie dish.
Baking
  1. Pour the sweet potato filling into the prepared pie crust, smoothing out the top with a spatula.
  2. Bake in a preheated oven at 350°F (175°C) for about 45-50 minutes, until the filling is set and a knife inserted into the center comes out clean.
Cooling and Serving
  1. Let the pie cool for at least an hour before slicing to ensure cleaner cuts.
  2. Serve plain or with a dollop of whipped cream.

Notes

Letting the pie cool before slicing makes for cleaner cuts. You can substitute fresh sweet potatoes with canned sweet potatoes if desired.
