Preparation
- Peel and cube the sweet potatoes. Boil in a pot of water until fork-tender, about 15-20 minutes. Drain and mash until smooth.
- In a large bowl, mix the mashed sweet potatoes, granulated sugar, brown sugar, evaporated milk, eggs, vanilla extract, cinnamon, nutmeg, and salt until well combined.
- If using a store-bought pie crust, unroll it into a 9-inch pie dish.
Baking
- Pour the sweet potato filling into the prepared pie crust, smoothing out the top with a spatula.
- Bake in a preheated oven at 350°F (175°C) for about 45-50 minutes, until the filling is set and a knife inserted into the center comes out clean.
Cooling and Serving
- Let the pie cool for at least an hour before slicing to ensure cleaner cuts.
- Serve plain or with a dollop of whipped cream.
Notes
Letting the pie cool before slicing makes for cleaner cuts. You can substitute fresh sweet potatoes with canned sweet potatoes if desired.
