For the filling
  • 2 medium sweet potatoes (about 1 pound)
  • 1 cup granulated sugar (or can substitute with brown sugar)
  • 1/2 cup evaporated milk for a creamy texture
  • 2 large eggs
  • 1 tsp vanilla extract for an aromatic boost
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg for a hint of spice
  • 1/4 tsp ground ginger
  • 1 pinch salt
For the crust
  • 1 prepared pie crust (store-bought or homemade)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Peel and cut your sweet potatoes into quarters. Boil them in water until tender, about 15-20 minutes. You can also roast them for added flavor.
  3. Once cooked, drain and let them cool slightly. Then mash or blend the sweet potatoes until smooth, aiming for about 2 cups of puree.
Combining Ingredients
  1. In a large bowl, combine the sweet potato puree, sugar, evaporated milk, eggs, vanilla, cinnamon, nutmeg, ginger, and a pinch of salt. Beat until smooth.
Baking
  1. Pour the filling into your prepared pie crust. Bake for about 55-60 minutes, or until the pie is set and the top is golden. If the crust browns too quickly, cover the edges with foil.
  2. Allow the pie to cool for at least an hour before slicing.

Notes

If the pie looks a little lumpy, don't worry; it's part of its charm! You can add bourbon or rum for a twist. Letting the pie cool enhances its flavor and texture.
