Preparation
- Preheat your oven to 350°F (175°C).
- Peel and cut your sweet potatoes into quarters. Boil them in water until tender, about 15-20 minutes. You can also roast them for added flavor.
- Once cooked, drain and let them cool slightly. Then mash or blend the sweet potatoes until smooth, aiming for about 2 cups of puree.
Combining Ingredients
- In a large bowl, combine the sweet potato puree, sugar, evaporated milk, eggs, vanilla, cinnamon, nutmeg, ginger, and a pinch of salt. Beat until smooth.
Baking
- Pour the filling into your prepared pie crust. Bake for about 55-60 minutes, or until the pie is set and the top is golden. If the crust browns too quickly, cover the edges with foil.
- Allow the pie to cool for at least an hour before slicing.
Notes
If the pie looks a little lumpy, don't worry; it's part of its charm! You can add bourbon or rum for a twist. Letting the pie cool enhances its flavor and texture.
